Just a list of observations and mentions about Link's character hinted in the game.

In-game Dialogues:

In the Hylian Homeowner quest, Link seems compelled to buy the house. Many people would think it really was his home as the villagers mentioned it used to be owned by a solider who left to fight the Calamity 100 years ago. Buuut the way I see it from the dialogue, Link probably just felt bad that no one wanted to take the nice cozy house.

At Gerudo Town, Ashai would comment on Link's innocent expression if he agrees about having the chance to learn more if there's more to learn.

Most of the children he interacted with seem to enjoy his company and would want to play with him. So it's likely he's very friendly and brotherly towards the kids.

Sand-seal puns.

His interaction with Bozai outside of Gerudo Town shows he can be quite firm around creepers like him, especially when disguised as a woman.

A lot of the Zoras see him with high regard, especially Zora guards who have befriended him 100 years ago. As it turns out, he was part of the secret club called the Big Bad Bazz Brigade and taught all the Zoras in the club some swordplay.

Link's Adventure Log:

Only in the Japanese version of the game, the entirety of his adventure log is written in his own perspective. So much of the entries were his own personal thoughts, comments and reactions from his encounters in his journey. It's the best insight you'll get out of Link's character.

He lists down recipes from people he helped.

Some pages hint a sassy and playful tone after completing certain challenges. (i.e, Sand-seal races, Gut-rock challenges)

He had a moment of feeling weirded out by the horned statue in Hateno Village.

A few of Link's entries do mention about Zelda here and there, and how wishes to see her smile again when things have finally settled down.

Mipha's Diary:

It's revealed Link had visited Zora's Domain at the age of four. And Mipha comments on he's already a skilled swordsman at his age -- almost a prodigy at it.

It's also revealed that in his childhood years, he's a much active and curious child.
